Looking for something to do with your leftover rice? This indian inspired rice salad is a great way to use up yesterday’s rice and try some new flavours!
The add ins part below is really up to you – we’ve included our favourites but you can add in any of your favourite vegetables.

Ingredients
The Rice
- 1 1/2 cups rice pre-cooked
Dressing ingredients
- 1/2 cup white vinegar
- 1/2 cup rice bran oil or similar
- 3 tbsp brown sugar
- 2 tsp curry powder
- 1 tsp cumin

Instructions
- Combine dressing ingredients and stir till brown sugar is dissolved.
- Add to rice and then add the remainder of ingredients.
- Make an hour or two before you serve to let the flavours develop.
