This recipe is really simple, and provides a simple biscuit that everybody enjoys.
The recipe is from the classic Edmonds Cookbook, and can be baked really quickly when unexpected visitors decide to drop in!

Ingredients
- 125 g butter softened
- 3/4 cup sugar
- 1 tsp vanilla essence
- 1 whole egg
- 2 cups plain flour
- 1 tsp baking powder

Instructions
- Cream butter, sugar and vanilla together until light and fluffy
- Add egg, beating well.
- Sift flour and baking powder together and mix into creamed mixture.
- Roll heaped teaspoonsful of mixture into balls and place on oven tray
- Flatten slightly with a fork.
- Bake at 190 C for about 12 minutes until golden.
- Add lemon zest, cocoa, orange zest, mixed spice or sultanas for varying flavours

Can I use margarine instead of butter?
Hi, my 6yr grandson & me made a batch of this super easy biscuit recipe. Turned out great and it was really yum. Oh! guess what? I added half cup of chocolate chips, it was super super yummy, that’s why it didn’t last. There’ll be some in everyone’s 2020 christmas stockings. Yey
Hi, just a question.
First of all, i know this isnt your recipe, as it’s happened a few times now with various recipes.. I find they fome out slightly bitter and salty. Kind of like an odd mixture of a baking powder/egg flavour.. It happens to my breads and biscuits whenever i dont add a specific flavour of any sort.
Just hope you can help me find where I’m going wrong!

Are you using a teaspoon or an actual measuring tsp? A teaspoon you make coffee with can be almost 2 tsps
