  1. Combine mash and crushed peanuts
  2. Gently flake the salmon and stir through mash mixture, then add cheese and parsley
  3. Season
  4. Shape into large balls, coat with egg then breadcrumbs
  5. Fry on a medium heat until golden, place to one side
  6. Simmer cream and mustard for 1 minute until thickened
  7. Drizzle over fishcake(s)
