Rachel’s Kiwifruit Beef
I have the loveliest recipe using what is in season in NZ at the moment (kiwifruit, NZ beef). It is truly delicious and melts in your mouth.

Ingredients
4
pieces
beef schnitzel
1
cup
breadcrumbs
(homemade is best)
1
large
egg
250
grams
Feta cheese
(use more if you love feta)
1
bag
baby spinach
4
Kiwifruit
peeled and sliced
Instructions
Beat 1 Egg and coat slices of Beef
Roll in bread crumbs and fry on a medium/high heat until golden brown (use butter or margarine)
Crumble a layer of Feta Cheese on one slice of Beef
Add a layer of Baby Spinach on top
Add another slice of beef to make a stack
Serve with sliced kiwifruit, so you can get some kiwifruit in every mouthful to complete the flavour profile.
