This recipe was submitted by a Facebook member Rachel Collins – a yummy-looking beef dish using kiwifruit.
Rachel says: “I have the loveliest recipe using what is in season in NZ at the moment. It is truly delicious and melts in your mouth. Be sure that the mouthful of beef, feta and spinach is complimented with some kiwifruit at the same time because thats when it really melts in your mouth! ”

Ingredients
- 4 pieces beef schnitzel
- 1 cup breadcrumbs (homemade is best)
- 1 large egg
- 250 grams Feta cheese (use more if you love feta)
- 1 bag baby spinach
- 4 Kiwifruit peeled and sliced

Instructions
- Beat 1 Egg and coat slices of Beef
- Roll in bread crumbs and fry on a medium/high heat until golden brown (use butter or margarine)
- Crumble a layer of Feta Cheese on one slice of Beef
- Add a layer of Baby Spinach on top
- Add another slice of beef to make a stack
- Serve with sliced kiwifruit, so you can get some kiwifruit in every mouthful to complete the flavour profile.
