Instructions
  1. Melt butter in a large pot on the stove.
  2. Add the chopped leeks – cook until soft.
  3. Add the chicken stock & chopped potatoes – bring to the boil for 15-20mins until potatoes are tender.
  4. Remove from the stove – stir in milk.
  5. Season with a good amount of salt & pepper.
  6. Allow to cool and then puree.
  7. Reheat if wanting to serve hot.
  8. Serve with toasted bread, garlic bread is nice.
