Gluten free products can often taste a bit odd or lack the right texture – not these pancakes! The xanthan gum is optional but helps them bind more like if regular flour was used. These will go down well with everyone.

- 3/4 cup gluten-free flour
- 1/2 teaspoon xanthan gum
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 2/3 cup milk
- 2 whole eggs
- 2 tablespoons cooking oil

Instructions
- Combine all dry ingredients in a bowl.
- In a separate bowl, whisk together milk, eggs, and cooking oil.
- Add milk mixture to the dry ingredients, and whisk until well blended.
- Let stand for about 10 minutes.
- Cook like regular pancakes - add to a medium-hot frying pan, and cook on one side until bubbles appear, then flip to finish.
