Pikelets are perfect for breakfast, brunch or even an afternoon tea snack. This is the easiest recipe we’ve ever seen for pikelets – its only got two steps!
The trick with pikelets is to wait until the bubbles start to appear on the top – then you know they’re ready to flip over and finish. Best served warm with your favourite topping, but also work quite well cold out of the fridge!

- In a bowl or glass jug, mix all ingredients together with an egg beater.
- Cook on a hot, lightly buttered pan. Turn over when bubbles appear

Five tablespoons of flour? Do you mean teaspoons? i put in three teaspoons and it was almost too sweet.
Excellent pikelets – also made them bigger (hotcakes/pancakes) and had them with bacon and berries – light, fluffy and yummy.
