This simple and cheap to make cake is great if you’re on a budget. There’s not too much fat in there either, but anyone telling you that a cake is healthy is trying to sell you something.

Ingredients
- 1 1/2 cups flour
- 2 tbsp cocoa
- 1 tsp cinnamon
- 1 tsp ground ginger
- 1 tsp baking soda
- 1 tsp salt
- 1 cup sugar
- 1/2 cup oil
- 2 tbsp vinegar
- 1 tsp vanilla essence
- 3/4 cup water

Instructions
- Line the bottom of a 20cm square cake tin with baking paper.
- Lightly butter and flour sides of tin.
- Measure the first six ingredients and sift in a fairly large bowl.
- Add the sugar and toss to mix in with the other ingredients.
- Measure the oil and add to the dry ingredients without stirring in.
- Add the vinegar, vanilla and water and stir well with a fork.
