- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 1/4 cups milk
- 1 whole egg
- 3 tablespoons butter melted

Instructions
- In a large bowl, sift together the flour, baking powder, salt and sugar.
- Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
- Heat a lightly oiled frying pan over medium high heat.
- Pour or scoop the batter onto the pan, using approximately 1/4 cup for each pancake.
- Brown on both sides and serve hot.

Back in my nana’s day I’m sure she knew exactly how much went into a teaspoon a tablespoon or a cup but in 2022 would be real nice to get some weights
Wow amazing recipe! Only ever use Chelsea Winter’s recipe for fluffy pancakes but this is sooooo much easier and delicious too!
made these during convid lockdown and i swear i could bounce of these. my mokos enjoyed them. I dropped these off at their home in time for their lunch…was nice to take a load of my daughter and her partner. Lunch with out their nan and papa but we videochat through the meal..thank you now im off to make cupcakes
I added feijoas to this recipe and found that it worked really well. Just added vanilla extract and extra sugar for my liking. thank you for sharing.

WARM BERRY COMPOTE

INGREDIENTS
1⁄2 cup granulated sugar
2 cups strawberries, hulled, quartered
1 cup blueberries
1 cup blackberry
2 teaspoons fresh lemon juice
1 pinch salt
1⁄4 cup unsalted butter, room temperature, cubed
DIRECTIONS
In a large, nonreactive saute pan over medium heat, combine 1/4 cup water & 1/2 cup sugar & bring to boil, stirring to dissolve sugar.
Cook 2 minutes, then add berries, lemon juice & salt.
Return to boil, then add butter & swirl mixture around in the pan until butter melts.
Spoon berries along with the sauce onto warmed dessert placts &, if desired, place a small scoop of vanilla ice cream (or yogurt) in center of each plate.
Serve immediately & enjoy!
