Battered Sweet and Sour Fish

fillet fresh fish
if your greedy 2.

onion
sliced
1
red pepper
cut into 2.5cm pieces
1
orange pepper
cut into 2.5cm pieces

pineapple
cubes in natural juice

tbsp
cornflour

tbsp
tomato ketchup
2
tbsp
light soy sauce

tbsp
white white vinegar
1/4
cup
cornflour
1/2
cup
plain flour
1
tsp
baking powder
1/4
tsp
salt
1/2
cup
milk
Instructions
Mix the cornflour, flour, baking powder and salt into a bowl.
Gradually add the milk, mix until smooth.
Cut the fish into bite size pieces.
Dip the fish into some plain flour, then dip into your batter mix.
Deep fry your fish until golden and set aside.
Sauce
Stir fry the onions, and peppers for 2-3 mins.
Strain the pinapple cubes (reserving the juice) and add to pan.
Mix together the cornflour and a little of the pinapple juice to form a paste. Add to pan
Stir in the remaining juice, ketchup, soy sauce, vinegar and 135ml water. Bring to boil, stirring until sauce thickens.
Stir in the fish and simmer for 1-2 mins.
Serve with boiled rice.
