Instructions
  1. Mix the cornflour, flour, baking powder and salt into a bowl.
  2. Gradually add the milk, mix until smooth.
  3. Cut the fish into bite size pieces.
  4. Dip the fish into some plain flour, then dip into your batter mix.
  5. Deep fry your fish until golden and set aside.
  6. Sauce
  7. Stir fry the onions, and peppers for 2-3 mins.
  8. Strain the pinapple cubes (reserving the juice) and add to pan.
  9. Mix together the cornflour and a little of the pinapple juice to form a paste. Add to pan
  10. Stir in the remaining juice, ketchup, soy sauce, vinegar and 135ml water. Bring to boil, stirring until sauce thickens.
  11. Stir in the fish and simmer for 1-2 mins.
  12. Serve with boiled rice.
