Ingredients
- 1 fillet fresh fish if your greedy 2.
- 1 onion sliced
- 1 red pepper cut into 2.5cm pieces
- 1 orange pepper cut into 2.5cm pieces
- 435 g pineapple cubes in natural juice
- 1 tbsp cornflour
- 2 tbsp tomato ketchup
- 2 tbsp light soy sauce
- 1 tbsp white white vinegar
- 1/4 cup cornflour
- 1/2 cup plain flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk

Instructions
- Mix the cornflour, flour, baking powder and salt into a bowl.
- Gradually add the milk, mix until smooth.
- Cut the fish into bite size pieces.
- Dip the fish into some plain flour, then dip into your batter mix.
- Deep fry your fish until golden and set aside.
- Sauce
- Stir fry the onions, and peppers for 2-3 mins.
- Strain the pinapple cubes (reserving the juice) and add to pan.
- Mix together the cornflour and a little of the pinapple juice to form a paste. Add to pan
- Stir in the remaining juice, ketchup, soy sauce, vinegar and 135ml water. Bring to boil, stirring until sauce thickens.
- Stir in the fish and simmer for 1-2 mins.
- Serve with boiled rice.
