Ingredients
- 6 Potato (peeled and mashed)
- 1/2 cup crushed salted peanuts
- 3 slices Gouda cheese
- 210g Pink salmon
- parsley
- 1 egg
- breadcrumbs (homemade)
- 1/2 cup Fresh Cream
- 1 tsp Hot English Mustard

Instructions
- Combine mash and crushed peanuts
- Gently flake the salmon and stir through mash mixture, then add cheese and parsley
- Season
- Shape into large balls, coat with egg then breadcrumbs
- Fry on a medium heat until golden, place to one side
- Simmer cream and mustard for 1 minute until thickened
- Drizzle over fishcake(s)
