- 1 cup flour
- 2 tsp baking powder
- 1 egg
- Lemonade approx 3/4 cup
- salt and pepper pinch

Instructions
- Beat egg in a bowl.
- Sift in Flour, Baking Powder, Salt and Pepper stir through egg.
- Then slowly add Lemonade mixing gently to make a thick batter.
- Dip fish, scallops, oyster or mussels into batter.
- Shallow or deep fry in oil until batter is golden.
- Drain well.

How would this recipe work if you used cornmeal instead of flour
Try it and was impressed mind you l didn’t have lemonade handy only Indian tonic water which did the trick. I like the batter running and cooked in coconut oil, the mussels were especially tasty

Going to try this, have been craving NZ style fish ‘n chips, have to travel far here in LA to a Kiwi owned fish ‘n chip restaurant, otherwise you can’t find them. This looks like the taste of home! Here they use beer in lieu of lemonade, I might try half ‘n half. Thanks!

This is my first time making battered fried mussels at home, followed the recipe because of the good reviews. Followed the recipe and instructions to the T, I used Lemonade Sprite a little more than instructed, until well mixed and thick but flexible I didn’t even dry my mussels out and this batter did not stick did not crumble cooked BEAUTIFULLY! And when I taste tested the first mussel, Delicious! Better than any takeaway and the taste of the batter and mussels together blend nicely, no mess, super easy to cook!, I turned my Nz stove on 3 to cook perfectly. Great recipe !

Clean oil at the perfect temperature 180 test with wooden spoon vigarous bubbles its ready try soda water chilled sml squeeze lemon juice DONT over fill fryer 1 or 2 fillets at a time results: golden beautiful fish im a fisherman 40yrs try it DONT cook too long NEVER walk away from deep fryer good luck
