- 4 eggs lightly beaten
- 1 cup flour
- 2 teaspoon baking powder
- 1/2 cup parsley
- 1/2 cup Feta cheese
- 1 cup Grated Pumpkin
- 1 teaspoon crushed garlic
- salt and pepper to taste
- butter for frying
- oil

Instructions
- Mix all ingredients in a bowl.
- Heat a little butter and oil together in a large frypan.
- Place tablespoonfuls of the mixture into pan in batches.
- Cook until puffed and golden.
- Keep cooked fritters warm in the oven while frying the remainder.
