Being vegetarian it's not easy to find good finger food.
One day i was with a friend and we wanted some thing to do with the lefted over mashed potatoes.
And wow came up with this ...Yummy

Ingredients
- 4 sheet puff pastry, thawed
- 4 boiled potatoes, mashed
- 1 large onion, thinly slice
- 1 garlic clove, crushed
- 150g baby spinach
- 350g ricotta cheese
- Salt and freshly ground black pepper and lemon pepper
- 1 Cup of grated tasty or mozzarella cheese
Directions
- Preheat oven to 180°C.
- Place spinach and potatoes , ricotta , garlic, onion and cheese and combine in a large bowl.
- Season with salt and pepper and lemon pepper.
- Cut pastry in half crossways.
- Place a portion of mixer on the middle of the pastry and pat the mixer into a long shape.
- Brush the top of the pastry with milk and then cut each roll cross-ways into about 4 rolls.
- Place rolls on prepared trays about 2cm apart.
- Bake for 20 minutes until pastry is puffy and golden .
