Jersey Baked Beans


A tradition French dish from Jersey for cold winter nights. Healthy and nutritious with a more exciting twist to your everyday baked beans.

Ingredients

  • 1 lb dried haricot beans
  • 1 lb dried butter beans
  • 1/4 lb dried broad beans (or frozen)
  • 1 onion
  • 1 lb belly pork
  • 1 pig trotter
  • Salt and pepper

Directions

  1. Put beans to soak all night. Put into casserole dish, cover with water and pork. Bring to boil and simmer for 30 minutes. Put in the oven (covered) and leave for three hours on low heat. Add water if it is lost in boiling.

10 3 1/2 hours Beans soak overnight then 15 minutes
