Fresh Baked Figs With Proscuitto And Blue Cheese


A simple but amazing dish with stunning flavours that arrive at your taste buds delicately bursting them with each bite. It came from a Dish Magazine and I have made it several times when Figs are in season and have amazed guests every time.
Definately a winner in this house.

Ingredients

  • 8 fresh figs
  • 50g cream cheese
  • 50g creamy blue cheese
  • 1/2 tsp toasted fennel seeds roughly ground
  • 1 clove garlic crushed
  • finely grated zest of 1/2 a lemon
  • 1 tb lemon juice
  • sea salt and fresh ground pepper
  • balsamic vinegar
  • liquid honey

Directions

  1. Pre heat oven to its higest setting.
  2. Cut a cross on top of each fig slicing them halfway down so that the sides open up like petals. Place them in a lightly greased baking dish just large enough to be comfortable
  3. Put cheese fennel garlic zest and juice in a blender and mix well. season
  4. Stuff each fig with a spoonful of the mixture.
  5. Drizzle the figs with balsamic vinegar and honey and add 2tb of water to the dish.
  6. Grill the figs until the cheese has melted and is bubbling a little
  7. Dont have the figs too close to the grill or the cheese will burn.
  8. Leave to cool a few minutes before serving. Place 2 figs on each serving plate and drape with proscuitto and garnish with salad leaves.
  9. Drizzle with an juices and give each a little grind of pepper.
