Tiamo Spaghetti Carbonara
On Lygon St, Melbourne is a popular student haunt called Tiamo. This recipe is my approximation of their Carbonara, a delicious alternative to the regular style which is too creamy for my taste.

- Olive oil
- Pecorino cheese
- Continental parsley
- Fry the bacon and onion gently on a low heat in the olive oil. This give the oil a lovely sweet bacon flavour
- Combine ricotta, salt & pepper, egg yolks and pecorino - mix well together
- Cook pasta and chuckthe peas in the water toward the end
- Drain pasta and peas and mix in the ricotta mixture
- Garnish with parsley
