Tiamo Spaghetti Carbonara

On Lygon St, Melbourne is a popular student haunt called Tiamo. This recipe is my approximation of their Carbonara, a delicious alternative to the regular style which is too creamy for my taste.

  • Bacon
  • Onion
  • Olive oil
  • Spaghetti
  • Ricotta
  • Eggs
  • peas
  • Pecorino cheese
  • Continental parsley


  1. Fry the bacon and onion gently on a low heat in the olive oil. This give the oil a lovely sweet bacon flavour
  2. Combine ricotta, salt & pepper, egg yolks and pecorino - mix well together
  3. Cook pasta and chuckthe peas in the water toward the end
  4. Drain pasta and peas and mix in the ricotta mixture
  5. Garnish with parsley
