Mad Ma's Passionfruit Mousse Cheesecake


This recipe was a high school project. The cheesecake was converted to a mousse and has been a huge hit.

Ingredients

  • 200gm coconut macaroons
  • 1 cup coconut
  • 125gm melted butter
  • 4 separated eggs
  • 3/4 cup of caster sugar
  • 250gm sour cream
  • 1 Tsp gelatine
  • 1/4 cup of water
  • 3/4 cup of passionfruit pulp

Directions

  1. Mix macaroons, coconut and butter to make base
  2. Beat egg yolks and sugar 'til thick
  3. Add sour cream and mix again
  4. Boil water and add gelatine, mix well
  5. Add to egg yolks
  6. Beat egg white 'til thick and add passionfruit
  7. Mix both egg mixtures together
  8. Pour on to base and chill for 12 hours
