Chocolate Lovers Creamy Ganache Tart, Tastes So Good You Won't Want To Share It.


I love this recipe as it's a knock off of one of our coffee shops desserts. I always order it when they have it but it's so popular I rarely get it.
I decided to try my hand at making it myself and this is what I came up with.
You can make it with milk, dark or white chocolate, whatever you fancy.
My first one, was mini versions using peppermint aero chocolate for my brother.
For my son I also make small version with lolly frogs or snakes stuck in the "mud"
My next one, I might layer strawberry freddo fogs in the centre to get a gooey sweet colourful centre. Maybe even caramello Koala :o)

Ingredients

  • 225 grams of plain flour
  • 40g icing sugar
  • 125g margarine
  • two egg yolks
  • 200g chocolate,
  • 60 mls thickened cream
  • 200g white chocolate,
  • 60 mls thickened cream
  • 200g chocolate,
  • 60 mls thickened cream

Directions

  1. BASE
  2. 225 grams of plain flour sifted
  3. 40 grams of icing sugar sifted
  4. mix then add 125 grams of softened butter
  5. mix untill it resembles bread crumbs.
  6. Add two egg yolks mix to a dough.
  7. Knead and roll into a ball, flatten into a disc, cover with gladwrap.
  8. Put in fridge for 30 mins.
  9. Roll dough out and put into your cheesecake/flan tin.
  10. Blind bake 170c for 10 mins then remove rice etc and bake 5 mins.
  11. GANACHE FILLING:
  12. 200g chocolate, 60 mls thickened cream, microwave for 45 seconds,
  13. mix until smooth. My microwave is 1100wt.
  14. Pour into pastry case.
  15. Make more layers to fill the case, 3 layers is usually enough for a flan tin.
  16. I always keep enough ingredients to make extra layers.
  17. You can use your imagination putting the layers in.
  18. Do three layers, one dairy one white then dairy again.
  19. OR
  20. Spoon in sid by side the white chocolate ganach, then the dairy chocolate ganache once filled use a skewer to make a swirl pattern.
  21. OR
  22. My favourite is to layer dairy milk ganache, then the white then, I pipe the last layer of dairy milk ganache on in a pattern, it will sink and spread a bt so don't make your pattern lines too close.
