Apricot Cake - Legend!

23 years ago I created and did a "bake-off" with this recipe - it was "simply the best" - and still is!

  • 1 cup chopped Central Otago apricots (cover with cold water and leave to absorb - at least 1 hour/can be overnight
  • 100 grams butter
  • 1 cup raw sugar
  • 1 size 7 egg
  • 1 cup plain flour
  • 1 cup wholemeal flour
  • half cup of chopped walnuts
  • 1 teasp baking soda dissolved in half cup of milk
  • 1 tablespoon orange juice and rind
  • ICING:
  • 25O grams cream cheese
  • 100 grams softened butter
  • half cup icing sugar (add more for desired consistency)
  • 1 tablespoon orange juice and rind


    1. cream butter and sugar
    2. beat in egg
    3. mix in flours, walnuts and juice
    4. stir in gently baking soda and milk
    5. then undrained apricots
    6. Pour mixture into prepared 22cm ring tin
    7. Beat icing ingredients until thick and creamy
    8. Ice cake when cold and decorate with chopped walnuts and chocolate curls
    Serves Cooking Time Prep Time
    cuts well into 12 wedges 50 minutes When apricots are hydrated, 10 mins
