Brandy-Coffee Chocolate Cake


The girls on the 3rd floor, Munelek Building, Port Elizabeth, South Africa are always on a diet, BUT, when we discovered this recipe, (given to us by a new secretary) the diet went out the door. Whenever it is someone's birthday, we bake it. Super moist and delicious. Some people to not like the brandy in it, leave the brandy out and add additional water.

Ingredients

  • 3/4 cup warm water
  • 1,5 cups sugar
  • 3/4 cup oil
  • 6 eggs - separated
  • 1 teaspoon vanilla
  • 1,5 cups flour
  • 3 teaspoons baking powder
  • 3 heaped tablespoons cocoa
  • 1 teaspoon salt
  • Topping: Caramel and cream
  • Sauce:
  • 1,5 cups sugar
  • 1 cup warm water
  • 1/2 cup brandy (Klipdrift)
  • 1 teaspoon vanilla
  • 3 heaped tablespoons coffee (if Nescafe - level tablespoons)

    Directions

    1. Mix water, sugar,oil, egg yolks and vinalla together.
    2. Sift flour, baking powder, cocoa and salt together and add to the above mixture.
    3. Beat egg whites stiff and fold into cake mixture.
    4. Bake for 40 minutes at 180 (pre-heated oven)
    5. Allow cake to cool.
    6. Mix together ingredients for sauce and boil for 1 minute and pour over cooled cake.
    7. Allow cake to cool and spread caramel over and whipped cream.
    8. I love to grate flake on top.
