Darls Carrot Cake

This is to die for moist and delicious. If I had a $1 every time I'm asked for this recipe I would be very rich, just like this cake never makes it to lunchboxes in our house.

  • 250g plain flour
  • 2teaspoons baking soda
  • 1teaspoon salt
  • 2teaspoonsmixed spice
  • 2teaspoons cinnamon
  • 4eggs
  • 165g brown sugar
  • 290gsugar
  • 2cups oil
  • 200g grated carrot
  • 120g walnut pieces
  • 135gcrushed pineapple (well drained)


  1. put flour soda salt and spices in bowl
  2. mix sugars eggs oil carrots walnuts and pineapple together
  3. pour egg mixture into flour and stir
  4. pour into a lined buttered 23cm round spring release tin
  5. bake at 150c for 1and a half hours
  6. insert a skewer in centre of cake to see if its cooked
  7. allow to cool completely before icing with cream cheese icing
  8. i like to add 1cup sultanas
